I can't say that I agree with the steriotype (although this is the first time I've heard it in this regard). I would say that there are more not cocky 18 year old hockey players than their are cocky ones, many more, in fact.

I attended a small university that won the Finals a few times and can safely say that there are many young players that go in with an attitude, but most change their ways.

It might not be the same in junior hockey leagues though.

Thats exactly why pro teams try to keep most of their youngest in lower leagues, to give them a chance to change before goin pro.
